Low Calorie Huevos Rancheros

   Protein-rich meals are essential when you are trying to lose weight. How important? Protein helps you sustain muscle during weight loss and improve muscle fitness --> with an exercise of course. It also has immunity and antioxidant function. Adding appropriate protein in our meals makes us also feel much fuller and aids in weight loss.

   Most of you know, how much I love Mexican food. ( see here for Mouthwatering Mexican Dishes) If I find a healthier version of what I love to eat..I can almost guarantee you that I will make it..maybe tweak it just a  little bit, and I will gladly share it.

Here's a delicious, easy and protein-packed recipe for you!




Ingredients:

1 1/2 cup Homemade Black beans ( or use low sodium 15 oz can black beans, drained and rinsed)
10 oz can diced tomatoes with chilies, drained.
4 eggs
1/2 cup diced onion
1/2 tsp cumin
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp chili powder
1 tsp Sriracha hot sauce
4 whole wheat tortilla, low carb
1/4 cup, reduced fat shredded cheese ( cheddar or Mexican)
2 tbsp chopped cilantro
2 tbsp olive oil

Directions:

Heat 2 tbsp of olive oil in a skillet. Saute the onions until translucent.
In a small bowl, mix the cumin, salt, pepper and chili powder. Mix until combined. Break or mash the beans.Set aside.
Add in the black beans and the spices. Cook for about a couple minutes. Stir frequently.
In a separate skillet, heat the drained diced tomatoes and Sriracha. Cook for about 2 minutes too. Set aside.



In a separate ( and clean) large skillet, heat the tortillas. Heat each side.


Spread 1/4 to 1/2 cup of black bean mixture on each warmed tortilla. Add diced tomato mixture on top.


For the eggs: Cook the eggs sunny side up - you can cook the eggs until egg whites are firm and cover the egg with a lid to or you can turn it upside down without breaking the yolks.
Place the sunny side up egg on each tortilla prepared with the beans mixture and layer with 1 tbsp of cheese and cilantro on top.



Each or one prepared tortilla with egg has 216 calories
