Ingredients:
1 cup whole wheat flour
3/4 cup rolled oats
1 egg
1/2 tsp baking soda
1/2 tsp salt
1/4 cup canola oil
1/4 cup butter, softened
1/3 cup brown sugar
1/3 cup sweetener of your choice, I used Splenda.
1 tsp vanilla extract
1 cup chocolate chips
Directions:
Line your cookie sheet with parchment paper or a silicone liner.
Process or grind your oats in a food processor or blender. Set aside.
In a large bowl , mix in flour , baking soda and salt. Stir in the processed oats.
In a separate bowl , beat the sugar, egg , vanilla , oil and butter. Beat until smooth. Add the dry ingredients and beat on low until well mixed. Stir in chocolate chips ( you can save a few pieces for later use)
Refrigerate the dough for at least an hour.
Measure about 1 teaspoon of the dough and place it on your lined cookie sheet.
Bake cookies in a preheated oven ( 350 degrees). Bake for 12 minutes.
At this time, I always add a few pieces of chocolate chips on each cookie. Let the cookies stand on the sheet for about 2 minutes before letting it cool completely on a cooling rack.
