Crunchy Biscuit Chicken

  It's been 4 weeks since school started and I was busier than ever. I love the new role though, I love to see our Lucy blossom and experience a whole lot of new things. I love picking her up at school and how Lily gets excited when we pick her big sister up. I just adore how Lily and Lucy kiss each other goodbye every morning.

  Speaking of busy, How time flies! We are already in the second week of September. If I think I am busy now, well this "- ber " months is the beginning of several celebrations! Birthdays, Halloween, Thanksgiving, Church events, Christmas parties and festivities. Because busy moms love easy meals, here's an easy meal that you can cook for your family. I did use a can of cream of chicken, but you can always make homemade cream of chicken.



Ingredients :

2 cups cooked, diced chicken
1 10oz Cream of Chicken Soup
1 14oz can green beans
1 cup shredded cheddar cheese
4 oz sliced mushroom
1/2 cup mayo
1 tsp lemon juice
1 10oz tube refrigerated flaky biscuit
1-2 tbsp, melted butter
1/4 cup cheddar cheese crushed croutons



Directions:

Preheat oven to 350 degrees
Combine the first seven ingredients in a saucepan, cook over medium heat just until hot and bubbly.



Pour the chicken mixture into an ungreased baking pan. I used 13 x 9. Separate the biscuit dough into 10 biscuits and arrange the biscuits over the chicken mixture. Brush each biscuit with the melted butter and sprinkle with the crushed croutons.


Bake uncovered for 20-25 minutes or when the biscuits are deep golden brown.


Creamy chicken with biscuits.. goodness in one bowl.


Serve with fruits.  Enjoy!
