Red Velvet Crinkles - A Bountiful Love

Red Velvet Crinkles



  If you are very close to me, you will know that I only have two favorite flavors in the world. Pistachio and red velvet.  Not that I would say no to a mean chocolate ice cream or cupcake. Let's just say my heart skips a beat at the sight of my two favorite flavors.  I love it when you have one of those bad, long, and crazy days and your sweet spouse comes home with ice cream.

 

Ingredients :

3 cups all-purpose flour
1/4 cup unsweetened cocoa powder
3/4 cup unsalted butter, softened
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1 1/3 granulated sugar
3 large eggs
1 tbsp milk
1 1/2 tsp vanilla
2 tsp lemon
5 tsp red food coloring
1 cup powdered sugar

 Directions:

In a large bowl, combine all the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt. Give it a good whisk.


In another separate bowl, using an electric mixer whip butter and the sugar until fluffy. 
Mix in the eggs, 1 egg at a time ( adding an egg is combined with the mixture). Mix in the milk, vanilla, lemon juice, and the red food coloring.


Mix it on low speed and slowly add in your dry ingredients. Mix until well incorporated. Cover the bowl with a plastic wrap and chill your dough for about 2 hrs. It should be firm enough to make them into dough balls.


Preheat oven to 350 deg.  Line your cookie sheet with parchment paper. Take your dough and form into balls ( medium balls, or your preferred size). You may use an ice cream scooper and it will be sticky so you may want to butter your hands. It is not the best feeling on earth ( slimy butter on your hands..) but you will thank me later. Your welcome ( wink wink).

In a small bowl with your powdered sugar in it, roll your dough balls into it. Coat it evenly. Transfer the dough into your lined cookie or baking sheet. Flatten it ..slightly. 

Bake for 10-13 minutes. Do not over bake. Let it rest on the hot cookie sheet for a little while before transferring into your cooling rack.


You can sprinkle the baked yumminess with a little bit more of the powdered sugar if you like.


I am in love...  with red velvet cookies. Yup..anything red velvet.
