Roasted Cauliflower and Mushroom Pasta Carbonara

How do I love pasta dishes..let me count thy ways? hmmmm..whole lot!! I am not Italian for sure but every week, a pasta dish is in my menu plan. It is filling and budget-friendly no doubt! Our girls even love plain buttered spaghetti noodles topped with shaved Parmesan cheese. I love good old spaghetti meatballs and my husband will not discriminate any good pasta dish. Speaking of meatballs, you can make it at home to save money. Here's the Homemade and Make-Ahead Meatball recipe.

Pasta Carbonara is one of my favorite pasta dishes. Bacon gives this recipe a delicious flavor and the roasted cauliflower along with mushrooms does not only add nutrients but a taste that will win your family over.




 
Ingredients:

3-4 cups Cauliflower Florets
8 oz fresh mushrooms
1 package of fettuccine pasta
4 - 6 pcs. bacon
2 chopped garlic cloves
1 tbsp olive oil
2 eggs
1/2 cup Parmesan cheese
1 tbsp parsley
1 tbsp olive oil
salt and pepper



Directions:

Start by roasting the cauliflower and mushrooms. Preheat oven to 400 F.
Place the cauliflower and mushroom in a baking sheet. Drizzle with olive oil, salt, and pepper.  Roast in the oven for 20 minutes, until it caramelizes.


Cook your pasta according to the package instructions. It usually takes 9-10 minutes. 
Cook the bacon and reserve about a 1-2 tbsp of it's fat.

 

In a medium-size bowl, mix the egg, cheese, and parsley together. Add in Salt and pepper.


Using the reserved bacon fat, saute the garlic and don't let it burn. Turn heat to low ( or turn off heat).


Drain the pasta and reserve about 1 cup of pasta water. Combine your pasta, egg mixture, roasted cauliflower and mushroom,  bacon into your garlic pan. Mix it thoroughly. Add reserved pasta water when needed, if your pasta is just too dry. I added about 1/4 cup only.



How easy is that? The roasted vegetables added extra flavor. You can also use turkey bacon for a less-fat option. Serve it with your favorite bread recipe!
