Ingredients:
5 cups cooked pinto beans (can use can of beans, homemade is cheaper
3 Tbsp. Homemade Taco Seasoning ( if you prefer the store-bought, use 1 pkg)
4 cups Mexican Rice ( recipe below)
2 - 3 cups Shredded Cheddar Cheese or Mexican blend cheese
Flour tortillas or make HOMEMADE FLOUR TORTILLAS
Suggested toppings:
Sour cream, Salsa, lettuce, tomato, jalapeno, cilantro, guacamole
Directions:
Mash and mix the beans, taco seasoning, rice, and cheese.
. Heat a small amount of Olive oil in the pan. Put about 1/2 cup ( depends on how packed you want it to be) of the mixture in the flour tortilla.
Roll it burrito style.
Pan fry until golden brown.
Serve with your favorite toppings. They are very crunchy and yummy!
MEXICAN RICE
2 cups of rice
2 cups Chicken Broth
1 tbsp butter
1 tsp garlic salt
1 tsp Homemade Taco Seasoning
If using a Rice Cooker: Just put all the ingredients in the cooker ..that easy!
Stovetop: Bring all ingredients to a boil. Reduce heat to low and cover. Simmer for about 20-25 minutes.
Now I'm super hungry!!! My family loves mexican and I love burritos....I think I'll have to make this next week. I have a package of tortillas in the freezer!
