3 Ingredient Barbecue Meatballs

Here's a quick and easiest appetizer you make with just 3 ingredients! Yes, you read that right , I have made these yummy babies before , instead of the barbecue sauce, I used chili sauce. They are both amazing! I was craving for flat bread when I made these , so as much I want to stay away from baking I couldn't resist the thought of making flat buns.  As a bonus , I had included the recipe for the homemade flat buns as well
( recipe is way at the bottom).

  Now for the 3 ingredients barbecue meatballs ...

 Ingredients :

2 lbs Frozen Meatballs
1 jar of your favorite Barbecue sauce
1 1/2 cup grape jelly or concord grape jam

Directions :

In a bowl , mix the barbecue sauce and the grape jelly together.

Place the frozen meatballs in your crockpot  and pour your sauce.. mix it until the meatballs are coated with the sauce.

Lucky me, I have a cute helper here.. Cook on low for 3-5 hrs or when heated through.

Voila! Tell me that's not the easiest recipe you can make. Serve it as an appetizer or make it a complete meal , serve it with rice ( brown or white) . I served mine with homemade flat bun.. recipe below!

Ingredients :

3 1/2 cup all purpose flour
1 large egg, beaten
2 tbsp, unsalted butter, softened
1/4 cup granulated sugar
1 1/4 tsp salt
1 tbsp instant yeast
1 cup warm water


In a mixing bowl ( can use hand held mixer or stand mixer, using dough hook) ,  combine the butter , egg , flour , sugar, salt, yeast and water. Mix on low speed until dough forms.


Knead the dough until it is soft and smooth. Your will look clean , meaning you shouldn't see any dry bits of flour or dough. If npt, you can another tbsp of water and knead until smooth.

Spray a large bowl with non stick spray and put the dough inside. Turn once , just to coat the dough . Cover the bowl with a dish or tea towel and let the dough rise for 1 1/2 hrs . It will double in size.

After the rising , remove from bowl and work on your floured surface. Separate the bowl into 8 equal size dough , Shape them into balls , transfer the individual dough balls into a parchment lined baking sheet.  Flatten the doughs.. it will look like a disc.

Cover the flattened rolls and let it rise again , it will look like this :

Preheat oven to 375 deg.
Brush rolls with melted butter and bake it for 15 minutes or until golden brown. 
Let it cool..

It is delicious!

 Cut in half if you desire and fill with the barbecue meatballs. Or not , eat it on the side, each recipe is good on its own.

Is it important to teach patterns? Just like what Milli of Team Umizoomi would always say..Patterns are everywhere! Pattern is a part of basic Math. Teaching preschoolers /kindergartens patterns lets them learn and recognize relationship between different things , shapes , objects..and how they work together.

Quick Spring Rolls with Thai Crystal Sauce

Random facts :

1. I like quick meals on school and weekdays. Who doesn't?
2. I love Thai food.
3. It reminds me of my dating days with Rob ,
4. I love sauces.

       Here's another quick meal that a busy momma would sure appreciate ,  the sauce also called Nahm Jeem Gratiem , is a sweet, spicy and garlicky addition to your delicious rolls. You can make a large batch since it keeps well in the fridge , use it with grilled chicken or fish  and same with deep fried fish.  The sauce is actually a yummy accompaniment to any Asian appetizers. You can use spring roll wrapper as well , I just happened to have the egg roll on hand.


Spring Roll :
1 1/2 lb ground pork
package of egg roll wrappers
1-2 tbsp sesame oil
1 tbsp olive oil
2  minced garlic cloves
1/2 cup diced onion
2 tsp soy sauce
1/2 - 1 cup chopped celery
1/2- 1 cup shredded carrots
1 tsp pepper
salt to taste
Canola or vegetable oil for frying

Thai Crystal sauce:
2 cups sugar
1 cup water
1/2 cup rice vinegar
1/4 cup minced garlic
2 tsp salt
1/2 tbsp red pepper flakes


In a small saucepan, combine all the ingredients except for the red pepper flakes . Let it simmer for about 20 minutes until the consistency resembles to a light corn syrup. Stir in red pepper flakes.

Let it cool and set aside or save in the fridge , (store in a jar) for later use.

Meanwhile , heat olive oil in pan. Saute onions until transparent, mix in ground pork and garlic. Cook until no longer pink or when pork is  " browned". In a small bowl , mix soy sauce, sesame oil , pepper and salt if adding. Add the soy sauce mixture with the pork. Mix well.

In a large bowl  with your chopped celery and shredded carrots , Mix in your cooked pork mixture. Stir well Let it slightly cool.

Lay the wrap ( will look like a diamond shape in front of  you). Place about 3 tbsp of the ground pork mixture . Fold the bottom part , roll it once , fold the left and right and roll. You can brush it up with beaten egg to close it , I did skip this part.

Set aside on a clean plate and finish up the rest. Heat oil and fry the rolls , seam side down. Fry 2-3 minutes per side, be careful not to burn your roll.

Let it drain on a paper towel.

Serve with the Thai crystal sauce.

Delicious! The next time you crave for Thai food, now you know you can whip up a big batch of the sauce and you can  make a quick and easy spring roll.

Practice the phonetic sound of the letter, We used this sandpaper letter so she can get the "feel" on the formation of the letter S.

We made painted a snowman and paste them in a popsicle stick. Kids..they love to paint!

To go with the Ss is for snowman theme for that day , we played :

We practice number sequence too, just simply draw socks using a cardstock , print or write numbers on it. Use a string or thin ribbon and clothespin. Ask your child to "hang" the socks in order. They just don't practice their numbers but also their fine motor skills
