Baked Cheesy Mexican Chicken


 This my friend is very simple (and I like simple), tasty, delicious food!  You can serve it with Mexican rice or with corn tortilla. It is so good and I'm sure you will add it to your "keeper recipe" list. Stock up on chicken breast when they go on sale to make it a budget-friendly meal. You can also whip up this tasty Homemade Flour Tortilla.




Ingredients:

1 lb chicken breast
1 tsp. HOMEMADE TACO SEASONING
1/2 cup mild enchilada sauce
4 oz Shredded cheddar cheese or Mexican cheese
1 tbsp. chopped green onions
1 tsp olive oil
 salt and pepper to taste

Directions:

Preheat oven to 350

Sprinkle taco seasoning on both sides of the chicken breast.


 Heat olive oil in a skillet, fry/saute the chicken breast,


 Diced up chicken and placed it in a greased glass baking dish.
Season with salt and pepper


 Pour the enchilada sauce and mix it until all the chicken is all coated.


Sprinkle the cheese on top of the chicken.

Bake for 350 for 15-20 minutes, until the cheese melts..and you start to drool because it smells sooo good!


Sprinkle green onions on top.
