Simple & Easy Homemade Granola

  I like making breakfast in big batches.  It is just a time saver. For those mornings that you just don't feel like cooking BUT you have hungry little mouths to feed ;) This granola recipe is very easy to make, healthier and not expensive to make.






Ingredients:

7 cups old fashion rolled oats
1/2 cup coconut oil
1 tsp salt ( I used kosher)
1/4 cup honey
1/2 cup brown sugar
1 tbsp vanilla extract
2 tsp ground cinnamon
optional: raisins, almonds, pecans or walnuts ( I skipped this since our kiddos are not a big fan of nuts)




Adjust the oven rack to the middle part.  Preheat to 375.

Line an 18x13 baking pan ( rimmed) with aluminum foil . Combine the oats , coconut oil and salt in a large oil and mix until all the oats are coated. Transfer the coated oats into your baking pan , spread it evenly. Bake until golden pale about 20 minutes. To avoid burning since every oven temp varies, you can stir it every 10 minutes. ( I didn't..it turned out perfect)


If you are using any nuts  process them in a food processor until coarsely chopped.
 In a saucepan, combine honey and brown sugar, cook over medium heat, stir it constantly to dissolve the sugar. Remove from heat and stir in the vanilla and cinnamon.


Remove the oats from the baking pan and mix it in a large bowl with the nuts ( or raisins if using), and honey mixture. Mix until they are incorporated.
Using the foiled baking pan, spray it with non-stick spray. Spread  ( evenly) the coated oats with the honey mixture on the pan. Firmly press the oats, making it flat and tight.


Bake for about 30-40 minutes until golden brown.

Let it cool for 10 minutes. Letting it cool much longer will make it hard to cut.


Seriously great tasting granola bars. It is easy to make and budget-friendly.



I loosely crumbled half of it and placed it in a mason jar. The rest I kept in a sealed container. .it will keep for two weeks. Isn't that awesome? Well..that is if it will last that long. Our girls loved it.


 
Add it with your Greek yogurt . A bowlful of these granola with milk is also delicious!
