Ingredients:
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 egg
1/4 cup greek yogurt
1/2 cup coconut oil
1/2 cup sugar
1 medium size zucchini, shredded
1 large very ripe banana. mashed
Directions:
Preheat oven to 350. Spray a muffin pan with a nonstick spray or use muffin liners. Mix all the dry ingredients in a separate bowl. Mix all the wet ingredients in a separate bowl.
Fill in the muffin cups/cavities with the batter. Bake for 20-25 minutes, Check the muffins if it is done by inserting a toothpick at the center of the muffin, it should come out clean.
Let it cool before serving.
