Cookie Butter and Banana Blondies


If you have some ripe bananas just sadly laying on top of your kitchen counter, put them to good and delicious use. While my all-time favorite is a good 'ole banana bread. I'm also up for using the versatile fruit in other yummy treats. I have made Layered Banana Muffins before and it was a hit too! You can always use a ripe banana as an ingredient substitute. Ingredients:

1 cup flour
1/2 cup mashed bananas
1 scoop or 1heaping tbsp of cookie butter ( I used a heaping tbsp)
1/2 cup butter, melted
1 cup light brown sugar
1 egg
1 1/2 tsp vanilla
1/4 tsp salt
1 cup flour


Brown Sugar Drizzle:
    1/2 cup light brown sugar
    2 Tbsp milk
    1 cup powdered sugar

    Directions:
    Preheat oven to 350°. Line an 8x8 baking dish with foil and spray with cooking spray.  Prepare all of your ingredients.


    In a mixing bowl combine melted butter and sugar. Mix to combine.


     Add in egg and vanilla. Stir. Mix in a heaping spoonful of cookie butter and stir until well incorporated.


     Stir in salt, flour and banana until batter is smooth and even.Pour into prepared pan.


    Bake for 25-30 minutes. Insert toothpick in the center to check if it is done.
    Transfer pan to wire rack to cool.


    While letting the blondies cool, make the drizzle.




    Brown Sugar Drizzle
    Ina medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to a boil. Remove from heat, let it cool for 3 to 5 minutes. Using a whisk, stir in powdered sugar. Drizzle on top of the blondies and let it set before cutting into squares.


     Easy and delicious!
