Low Calorie Oatmeal Cups

   We all know that breakfast is the MOST important meal of the day. Skipping your breakfast will sabotage your health, most especially if you are trying to lose weight. I can relate to each and every one of you, how difficult it is to have a sit-down meal on busy, rushed early mornings. Sometimes, it is just too early and some of you are just not hungry yet and by the time you are ready to eat-- you are already famished, you will more than likely grab an unhealthy food to curb the hunger.   

  These Low-Calorie Oatmeal Cups are perfect for "on the go" mornings. Each PLAIN oatmeal cup contains 170 calories. The more toppings you add and the kind of toppings you add will alter the calorie count.




Ingredients:

3 cups old fashioned rolled oatmeal
1/4 cup coconut oil
1/4 cup brown sugar
1/2 cup sweetener of your choice - honey, monk fruit or coconu sugar
1/2 cup unsweetened applesauce
1 cup skim milk
2 eggs
2 tsp. vanilla extract
1/2 tsp salt
1 tbsp cinnamon
2 tsp baking powder

optional toppings: 1/4 cup chocolate chips, 1/4 cup reduced sugar Craisins, 1 tbsp chia seeds, 1 tbsp flax seeds.


Directions:

Preheat your oven to 350 degrees. Prepare muffin tin using muffin liners.

 Whisk the egg, coconut oil, and brown sugar.  Add in applesauce, milk, cinnamon, salt, and vanilla.


Add the oats and baking powder. Stir well.


Mix your toppings together. 



Fill your muffin liners with the oat mixture, about 1/4 cup each tin.

Add the toppings on each muffin cup, pressing them slightly.


Bake for 25 to 30 minutes.

Let it cool. Serve warm or you can make a big batch and freeze it for later use.

They are so good. Chewy and satisfying!
