Mango Coconut Cream Popsicles

I was on a homemade popsicle kick last week, I got excited with all the good bargains on the fruits and produce aisle. I made about 3 different kinds of homemade and easy popsicles (that, of course, I will be sharing to all of you). The inspiration to "mass produce" these homemade popsicles was inspired by our tiny taste testers at home -- our popsicle obsessed little girls.

These Mango Coconut Cream popsicles are just perfect for this summer heat. The tropical taste is a nice break from the usual chocolate popsicles. You can use fresh mangoes or frozen. Our youngest daughter loves mangoes! We tried a jar of preserved mangoes that we bought at Costco, she fell in love with it. I told her that she will love the fresh fruit. Fresh is always better anyway. Sure enough, it is her favorite dessert. Luckily, they are on sale lately..5 for $2.00 ?!! I will take that!








Ingredients:

2 1/2 cup of diced mangoes (fresh or frozen) - about 3 mangoes if using fresh.
1/2 cup pineapple juice
1 cup of coconut milk
2 tbsp sugar ( can use honey)
2 tbsp water
2 tbsp low-fat yogurt (can use dairy-free yogurt)


Directions:

If using fresh mangoes, diced about 3 mangoes.


Blend the pineapple juice and the mango, until smooth.



It will be smooth and thick. Set aside.



Meanwhile, prepare all your ingredients for the coconut cream.  Blend it all together, just a quick pulse.



Pour your mango puree into your popsicle molds and freeze for about 10 to 15 minutes. When it is somewhat solid, pour your second puree, which is the coconut cream. Freeze again for 10 to 15 minutes. Repeat the process.



Creamy and sweet!

  1. Mmmmm, these look great! I love making homemade popsicles, too. Isn't it so fun?? I'll have to tweak this recipe a little (allergic to mango & pineapple), but I bet peaches would be yummy! :)

  11. Yes, this recipe is simple and tasty especially for children but I cannot cook it because my child has a mango allergy. I thought that it's a huge problem but after reading http://stopallergyguide.com/mango-allergy/ I understood that it's not :)
