Crab Ceviche - A Bountiful Love

Crab Ceviche

So probably by now, you know how much I like Mexican food. I like spicy but I tamed quite a bit because my family is not into spicy food.. not the hubby and no way with the kids. It would have been nice if yours truly have an access ( it is just expensive where I live) with fresh crab but imitation crab is good as well.. Easy and economical. Win - win.

Ingredients:

1 lb imitation crab meat
1 -2 cups of tomato, diced
1/2 red onion, chopped
1/3 bunch of cilantro, chopped
1-2 avocados, diced
4 limes
Salt & Pepper
Tapatio

Directions :

Prepare all of your ingredients , except for the avocados .. You may want to add this few minutes before serving time.

I always store any herbs , even green onions in a container with water inside it. It makes it last longer, saves me money..no waste..smart me.

Baby limes..how cute are these!!

and don't get me started with my handy helper here..

Mix all the ingredients in a bowl , season them with salt and pepper.

Since I am serving the ceviche right away, I am adding my diced avocados already.

Add a few drops of  tapatio, you may use jalapeno peppers if you prefer.

Mix it like you mean it...

and serve the yummy ceviche on top of tostadas.. IT IS REALLY GOOD! You will definitely go for your second serving.. I won't judge. I had three!
