Butternut Squash Noodle Soup with Tofu

  I have shared before that our 3 yr old girl had declared strike on veggies. My hubby is not a big fan of anything squash . That is why, I secretly had a happy dance moment when I got them to eat these Chocolate Zucchini Muffins.  Though I did warn my hubs that I was serving butternut squash for dinner, I told him to give the squash a chance. He did and he was such a trooper ( always!). Surprisingly , they loved it. Every sip they had of this hearty and delicious butternut squash noodle soup.. I was feeling triumphant deep inside.  Hail to the B --- Butternut Squash!


2 cups  Homemade veggie stock ( store-bought is fine)
3 cups butternut squash soup, without a nut or dairy base.
1/2 tsp salt
1/2 tsp soy sauce
2 bundles of rice noodles from the package
1/2 cup medium soft tofu, rinsed and cubed
2 green onions, sliced
1/2 tsp Sambal Oelek
1 tsp toasted sesame oil


I used, Trader Joe's Organic Butternut Squash Soup for this recipe. In a large pot, combine the soup and the broth. You can always use store bought vegetable broth but if you want lesser sodium it is very easy to make it at home.

Add in the salt & soy sauce. Mix well and bring to a light boil ( if you see "gentle bubbles" )

Meanwhile,  cut the tofu into cubes.

Cook the rice noodles according to package instructions. 

Remove the soup from heat once it reached it's boiling stage. Pour  the hot soup into a bowl , add noodles ( maybe a handful), depends on how much you want. Add in the tofu and cover for about 5 minutes. 

 Add 1/2 tsp of sambal oelek into the bowl, More if you want it spicier.  Finish it up with sliced green onions and sesame oil on top.

Serve immediately. So good and it will definitely warm you up.

The best part of having this for dinner , is that I get to be fancy. I get to use my chopsticks. Yeah..that's enough fancy for me.

You can always add fresh veggies with the soup. You can add a handful of  spinach or sprouts.
