Ingredients:
2 tbsp olive oil
2 cups of Homemade Black Beans ( can use store bought black beans)
1/2 tsp cumin
4 cups Homemade vegetable broth ( or chicken broth)
4 cloves minced garlic
1/4 cup cilantro, chopped
1/2 tsp salt
Directions:
Combine the black beans , cumin and broth in a large saucepan. Bring to a boil. Since my beans are already pre cooked , I just simmered it for a few minutes. If using canned or dry beans ( soaked overnight), once it boiled , reduce heat to low, partially covered and simmer until tender .
Drain the beans. Transfer to a bowl and mash the beans. Stir in garlic, cilantro and salt.
Form the mixture into balls. Flatten the balls to form cakes. Refrigerate for one hour.
In a non stick frying pan. heat olive oil. Fry the cakes over medium heat turning only once. It is done when you see a little crisp.
Very simple and affordable but healthy and filling.
