Mexican Pizza

Hubby and I loves Mexican food. I Love spicy food , him ? not as much. Our favorite Mexican joint is Alberto's ! I tell you what, we are just in love with their rolled tacos and chimichanga plate. A guilty pleasure indeed.

Since we love Mexican dishes . I do try to make some here at home. Not only that "eating in" and limiting your eating out saves you tons of money , homemade is always the best. Besides , limiting your dining out experiences will make it just more special.

Ingredients :

1/2 lb of ground turkey
2 minced garlic cloves
1/2 cup diced onion
1 tbsp of Taco seasoning or use  HOMEMADE TACO SEASONING
1/2 cup salsa , jar or homemade
2 cups Mexican blend shredded cheese or cheddar cheese
10 flour tortillas
topping of your choice : I used black olives , green onions and fresh tomato.
you can add some hot sauce too , I skipped this. ( because of our kiddos )

*** I made 5 Mexican pizza.


 Preheat your oven to 350 deg.  Prepare your onions and garlic

In a skillet , place the ground turkey , onions and garlic.Cook until meat is no longer pink. Drain excess fat.

Put the meat mixture back into  the stove , medium heat. Add in the taco seasoning. I used homemade.

Mix thoroughly..

In a parchment lined cookie sheet or tray , Place two tortillas side by side. Spread refried beans on top of each tortilla ,

followed by the seasoned ground turkey..

cover each of the tortilla with another layer of tortilla.. Bake for 10 minutes

Cool slightly , Spread salsa on top of it..


your toppings..

chopped tomatoes , olives and green onions.

Put the pizza back in the oven and bake for another 5-7 minutes or until the cheese melts.

Let it cool, and cut it into serving sizes.

It is so delicious , and I promised you that is yummier than that famous taco selling  fast food place.

As for Alberto's , I am not going to attempt your rolled tacos and chimichanga plates , you will remain a guilty pleasure and a  " fridate" night craving.

Letter of the week Aa

 Time goes by so fast. Big sister will be going to school really soon. As any parent would be, I am excited , anxious and happy for her. She is such as social butterfly and a very eager learner. It will be bittersweet for me , it is a good reminder that kids grows up so fast . I will miss this sweet and kind hearted girl of ours ..and yes even if it is just a few hours only. 

I had been doing lessons with her and little jumping bean for a while now. Though she already knows her alphabets , numbers , shapes and colors , we started the letter of the week as a "recap" as well. Besides, we don't want to send our girl in the formal school setting without being armed with knowledge.

When teaching our little ones at home ( toddler-preschool age) it is important to be very patient. I must admit that it can get very challenging because they do tend to have a short attention span. It is important for any activity or lesson to be play base and no pressure on you and with them.  Consider it as a bonding time with your kids. 

Make time. After all, our kids are worth it.

Books to Read 

Here are some books that you can read to them :  

 AA (Alphabet) by Kelly Doudna
First Animals by Vision St Publishing ( dollar store only)
Alphabatics by Susy MacDonald

To save money , local library is a good option. You can also use whatever books you may have in your home library to supplement with the lesson.

We start out by saying the letter out loud. Teaching her  the phonetic sound of the letter. Secondly , we do the tracing of both  upper case and lower case letter A. Practicing their fine motor skills is essential for learning how to write.

 Please know that every child develops and learns differently. Big sister doesn't always hold the pencil or marker correctly. . and that is why we help her..practice on a regular basis will make it perfect.

Tip : Printing can be costly as well, to save money ..we use  sheet protectors , dry erase markers , dry erase erasers. That way we can re use it over and over again. You can also laminate the printables. If you don't own one , Some office supply stores like office depot does laminating service.

 If your preschooler is a newbie on this, I suggest that you practice their line tracing first to get them familiarize with the concept.

 See ? I am not too strict on the proper way of holding her marker. Why ? approach is to let her learn  at her own pace. As long as she gets the concept of tracing. Will get there though.. but for now..I will let her learn and develop on her own way.

I printed this simple sight words for her to read.  Since our letter of the week is Aa, its just right  for an Apple theme.

Since we do a letter of the week theme, I do follow a guide lesson plan.  I call it guide because I'd like to be flexible when the situation calls for it. Like what I have mentioned , I try not to be strict.  Preschoolers and toddlers learn through play. While its true that it is better to enforce a school environment , however they will have plenty of time for a formal school.  I choose a quality and fun experience with our little ones. 

It can be frustrating at times too. I hear you, been there..done that.  Remember , practice and patience..makes it perfect,

 It is important too that they get some socializing and an outdoor trip. We call it a nature trip. Kids loves the outdoors, they learn too on their surroundings.

Coconut and Turkey Chili

  Fresh coconut milk has a lot of health benefits  and there are tons of recipes that you can incorporate coconut milk with. Since I do not have easy access to a fresh coconut milk here , a canned light coconut milk will do. Though I tried making it fresh before , it was an epic fail. One of the many reasons why I miss Philippines where coconut milk is readily available. A quick visit to a wet market or "palengke"  will get you a fresh pressed coconut milk at a reasonable price.  

Here's a quick Tagalog translation:

coconut milk
coconut "cream"
kakang gata
the first pressing of coconut milk, thicker than subsequent pressings
any stew that uses coconut milk as a prominent ingredient


1 1/2 pounds lean ground turkey
1 tbsp olive oil
2  15 oz cans tomato sauce
1 cup green peas
1 cup chopped red onion
1 tbsp garlic powder
1 tbsp curry powder
1 oz can light coconut milk


In a medium to large soup pot, brown the turkey in the olive oil.

Add the red onions,  once the turkey meat is browned.

Add the tomato sauce and let it simmer for a couple minutes.

 Mix the coconut milk in. Stir to combine. Add the curry and garlic powder..then the green peas.

Let it simmer for about 7-10 minutes, until the turkey meat is thoroughly cooked.

Serve it with white rice.

When a Small Church Grows Big and Fails You

Did  disappointment over a small church gone big ever happen to you ? You have attended the small church when they were still in humble beginnings looking to know and accept Jesus in your lives , when the church you've come to love became big , you felt lost , disappointed and questioned yourselves if this is really the Church you want to be a part of, the church you want your family to be a member of.

I admire Churches that do not ask where you came from. What was your  previous religious background and beliefs. I have a great respect for churches that welcome people of all walks of life. I also appreciate churches who cater to family..specially with babies , with kids ( that we all know won't sit still even for 5 minutes) .  They have a nursery , where you can drop your little bundle of joy while you attend the service and childcare , where young minds can also be ministered to , and taught the word of God. This  is great for parents. Everyday you serve your family and that one day ..Sunday,  a day to worship our God.. you get to feed your soul solemnly.

 Lets face it, babies, toddlers they are never quiet. As a parent we've all been there when we are too sensitive enough to remove your child because they are just simply noisy. We know when to remove or kids when they start to disturb.  But what happens when there are certain circumstances or days that you just have to be with your child inside the sanctuary.  The most terrible thing that you can ask a mom or a dad  during a service is to step out of the church because ushers believe ( on their standards of disturbance) that your child is disturbing the peace and sanctity of the fellowship. What happens when the church comes up with superficial rules and ways? Do you stay with them or look for a church that embodies what your souls, mind and heart needs?

A church..any church is run by a large number of people. People are bound to make mistakes. No matter how many  new rules they come up with or well decorated a church can be. The truth is JESUS IS THE HEAD OF THE CHURCH.  Know that He loves children . and this is what matters, when we know the greatness of His love for us.

" But Jesus called the children to him and said, “Let the little children come to me, and do not hinder them, for the kingdom of God belongs to such as these. "  -- Luke 18:16

If you decided to take a little hiatus from the church because you need to pray for the Lord's guidance on how you can handle the situation best..that is just okay!
As parents we do what we have to do for our family , if it involves raising them as God as the center of your family..of course you have all the right to re evaluate your choice of fellowship. Pursue His Words in any way that you can. Don't stop . Pray .

" Pray without ceasing , In everything give thanks " -- 1 Thessalonians 5: 17-18
Know that in every church , you will still find that one person..that one bad egg.  Perfection ( of this world)  is far from reality. We all go to church to hear the Word of God , and don't let this one bad egg hinder you.

And when you decide to try out another church , go and do not be guilty.  Seek Him , His Words.

" But if from thence thou shalt seek the LORD thy God, thou shalt find [him], if thou seek Him with all thy heart and with all thy soul. " -- Deuteronomy 4:29 ( KJV )

Do not bash the previous Church that you use to attend. We are human beings and we get mad, this is hard specially when we got hurt , embarrassed and agitated.  Instead just pray for guidance . We have to vent , I get it. But let's not talk bad about any religions as well. RELIGION WILL NOT TAKE YOU TO HEAVEN , BUT YOUR RELATIONSHIP TO GOD WILL ..
