Meatless Fridays : Lentil Tacos


Who doesn't enjoy a taco or two, but without meat in it? Hmm..is kinda scary ( maybe just for me..ha!). I had mentioned before that when we can, we do a meatless meal once a week. Baby steps to eating healthy is way better than not taking steps at all. We do the best we can..substituting some ingredients for a healthier one , making most of the spices or ingredients homemade and revising a recipe with lesser sugar.  This tacos..trust me.. it taste pretty good! I had to admit though , I was hesitant to make it . It amazed me , this lentil tacos are really tasty.



Ingredients:

1 cup washed lentils
2 cups Chicken Broth ( Homemade or Store bought)
1 14 oz can diced tomatoes with green chilies
2 tbsp Homemade Taco Seasoning
1 tsp minced garlic
Taco Shells
Toppings of your choice :  guacamole , lettuce, tomato , shredded cheese , sour cream .

Directions:

Add all the ingredients in the crock pot.  Give it a stir . Cook high for 4-6 hrs. Don't worry if it looks like soupy at first..the lentils will absorb it.



this is why crock pot liners are always nice to have..


Fill the taco shells with the lentils and top it with your favorite fillings/toppings.
