Chicken Broccoli Stir Fry


 Recently at our local grocery store, they had the chicken breast bone in on sale. To save money on our groceries, I usually stock up on meats. You can batch cook the chicken breast as well for several meals, saving you time too. I fillet and cut my own chicken, saving the bones for homemade chicken broth and freezing it for later use.

Ingredients:

1 lb chicken breast, cut into big chunks or strips if you like
1 package 10 oz frozen broccoli
1 1/2 cups hoisin sauce
2 tbsp honey
1 tbsp sesame oil
salt and pepper to taste
1 tbsp olive oil
4 cloves, minced garlic
half of the medium size onion, chopped.
1 tsp sesame seeds
1 tsp grated ginger.


Directions:


Using a stir fry wok, heat olive oil. Saute onion until transparent, followed by the minced garlic. Saute until golden brown.


Saute the chicken with the garlic and onion for a few minutes, Sprinkle with salt and pepper.


Meanwhile , in a separate bowl .. combine your sesame oil , honey , hoisin sauce , grated ginger. Add about 1/4 tsp of pepper. Mix thoroughly.


Put the frozen broccoli in your wok together with the sauteed chicken, Cook until it is bright green. We don't want mushy vegetables right?


Pour the sauce in the wok, making sure all the chicken and broccoli are all coated. 


Sprinkle sesame seeds on top. Serve with rice.
