12 Days of Christmas yummies and treats : Thumbprint Cookies and Peanut Butter Cookies

   12th day of Christmas yummies and treats. 5 days away before Christmas. And because it is the last day and because we are all giddy, here's a 2fer! 2 cookie recipes..they are both classic and delicious!





THUMBPRINT COOKIES

Ingredients:

2 cups all-purpose flour
1/2 tsp baking soda
1/4 cup walnuts, finely chopped
1 cup or 2 sticks of butter, softened ( I only used 1/2 cup or 1 stick..it turned out fine!)
1/2 cup granulated sugar
1 tsp vanilla extract
1 large egg

topping: 1/4 cup finely chopped walnuts, jam or jelly ( I used a grape jelly).


Whisk flour and baking powder together in a separate bowl. Mix in walnuts.

In a large bowl, beat  (medium-high speed) butter, adding sugar gradually. Beat until light and fluffy.

add eggs, beat in vanilla.

She is so serious, I told her Santa would love a smile.


Place the dough in a plastic wrap and refrigerate for 30 mins.






Preheat oven to 350 degrees

Roll dough into 1 inch balls and roll it into the nuts.


Place on a cookie sheet lined with foil or parchment.

Make an indention using your thumb or the back of your measuring spoon.



Bake for 10-12 minutes or until lightly golden brown.

Immediately fill the "cups" with the jam or jelly.



PEANUT BUTTER COOKIES

Ingredients:

1 1/2 cups all-purpose flour
1/8 tsp salt
3/4 tsp baking soda
1/2 cup softened butter
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
chocolate chips 

In a small bowl combine your dry ingredients - flour, salt, and baking soda.

In a large mixing bowl, beat the softened butter and peanut butter until smooth and creamy.

Beat in sugars and mix well.

Gradually beat in flour mixture.

Wrap the dough each in plastic wrap and refrigerate for about 3 hrs.

Preheat oven to 350 degrees.

Form a 1-inch dough ball. I also indented each dough and place the chocolate chips in the middle. I purposely did not use a whole lot of chocolate chips, you can add as many as you want.


Place on a foil-lined or parchment-lined baking sheet. 

Bake 8-10 minutes or until edges are slightly brown.

Let it cool.
