Black Bean and Butternut Chili

  Who doesn't love a warm bowl of chili waiting for you when you get home? This healthy and tasty black bean and butternut squash chili is just perfect for the Winter season. It's been raining here for almost a week ( Thanks to El Nino) and it is way colder than last year. I know, So. Cal. residents are sissy's when it comes to our tolerance to cold but I know one thing we can all agree on is how perfect it is to have a hot and delicious bowl of chili on a bitterly cold night.

  Here's an easy, frugal and healthy crockpot black bean and butternut squash chili recipe for you. You can use a 5qt. slow cooker and this recipe makes 10 servings.




Ingredients:

5 cups butternut squash, peeled and cubed
1 chopped, medium yellow onion
2 tbsp of olive oil
2 cloves, minced garlic
1 cup, chopped red bell pepper
2 15 oz, low sodium black beans, rinsed and drained . I used the homemade black beans.
1 14oz can crushed tomatoes
2 tsp dried parsley flakes
1 1/2 tsp dried oregano
1 1/2 tsp cumin
1 tsp chili powder
salt and pepper to taste.

Directions:

If you are lazy like me , you can buy these peeled and cubed butternut squash at Trader Joe's. It is less than $2 a bag. 

 
In a large skillet, saute onion,red bell pepper and garlic in olive oil. Until the onions are translucent and garlic is fragrant.


Put all the remaining ingredients into your slow cooker and mix in the sauteed onions.


Cover, cook on low for 4 hrs. or until the vegetables are tender.


Protein rich and hearty chili!


Serve with your favorite bread or you can also try this Homemade French Bread and Homemade Tortilla.

Crockpot Green Chili and Corn Dip

   Give me some chips and a good dip, I will call it a good day. I love watching movies with my family and having snacks to munch on.  I always drool over guacamole and chips but a good salsa makes me excited too! This Crockpot Green Chili and Corn Dip is a very nice break from your usual dips. First of all, it is one of the easiest dips that  you can make. Creamy, tasty with a little kick!  I don't know about you but spicy dips or salsa is always a winner in my book.


Crockpot Green Chili and Corn Dip


Ingredients:

8oz , softened Neufchatel Cream cheese, or low fat Cream cheese
16oz jar Green chilies or Salsa Verde
1 1/2 cups frozen sweet corn
1/2 cup, finely chopped onion
2 tsp garlic powder
2 tsp cumin
1 cup shredded cheese , Monterey Jack
1 diced tomato
1/2 cup, chopped fresh cilantro



Directions:


Make sure to coat your crockpot with non stick spray, for easy cleaning. Combine the Salsa Verde, corn, onion, garlic powder and cumin in your crockpot. Add the cream cheese and mix to combine. Cover and cook on high for 2 to 2 1/2 hrs. Stir in the shredded Cheese,tomatoes and cilantro. Cover and cook for an additional 15 minutes.


Best when served warm. It is really good with chips and crackers. This creamy and delicious dip is perfect for movie nights, parties and The Superbowl!  Did I tell you that it is very addicting?

Pao de Queijo

These awesome lil cheese breads are so good , I bet that you will not just stop at one bread. These goodies are one of the many delicious Brazilian foods I look forward to indulging everytime I go to a Churrascaria.  My former boss's wife ,  first taught me how to make these. We became really good friends. Every time , she comes back from Brazil, she never fails to bring me some candies and treats.

These Pao de Queijo are very easy to make. They are crispy outside but very soft inside. Did I tell you they are gluten free too? Just the best! They are very addicting!



Ingredients:

1 cup milk
1/2 cup water
1/2 cup vegetable oil
3 cups tapioca flour
1 tsp salt
1 cup grated cheddar cheese ( you can also use Parmesan)
1 egg

Directions:

Preheat oven to 400 degrees and line your cookie sheet with silicone liner or parchment paper. 
Boil milk , water and oil together.



In a separate bowl, mix the tapioca flour, salt , egg and the cheese.



Pour the milk mixture over the tapioca mixture,mix with a spoon until it becomes a smooth batter.
If the batter is too sticky to form a ball, you may add a teaspoon or more of tapioca flour. You can also put some of the tapioca flour on your hands for easy rolling.
Make balls with the batter. An inch in diameter or a tad bigger . I made mine, a little bigger than usual.



Bake for 20 minutes , until they are brown.


Best served warm but you can always reheat them in the microwave for 10 seconds the next day!!


It is so good to munch on by itself ,or serve it with a warm bowl of stew or eat it with your favorite barbecue and side salad!
