Slow Cooker Tostada

Raise your hand if you love your crockpot and just absolutely get happy with simple meals. Let's call it a lazy meal. This recipe is one of those ridiculously easy and yet super yummy dish. This Slow Cooker Tostada is just the bomb. I still remember the look on hubby's face with his first bite.. yeah..that good!





Ingredients:

1 lb browned ground beef
2 cans refried beans, I used the  Homemade Refried Beans
1 package of taco seasoning or use Homemade Taco seasoning, Click here for recipe.
8 oz can tomato sauce
1/2 cup water
10 tostada shells

toppings of your choice : olives. shredded cheese, lettuce, tomato , avocado, salsa, cilantro , tapatio sauce


Directions:

Brown ground beef and strain.


Combine the ground beef, refried beans, taco seasoning , water , tomato sauce in a slow cooker.


Cover and cook on low for 6 hours.



Serve with warmed tostada shells. 


Spread a layer of the ground beef ,


Topped with your favorite toppings!


Crunchy good!


Drizzle with tapatio sauce or with your favorite hot sauce. We are a tapatio fan in this household.

Healthy and Allergy Free Baking Substitution

Happy Monday sweet readers of mine.On almost all of my posted recipes, I do try to give a healthier substitution on some of the ingredients. Not just the cheaper substitute but also the substitute that is hip friendly. I get it, I'm a momma of two growing and active girls and serving healthy meals is a mission of mine.

I have also met and have some friends that get discouraged over allergies that they or their kids have. It is a challenge, I totally understand but don't let it limit you in the kitchen. Here's a few basic ingredient substitutions that you can use. Don't forget to download the free printable , print it and display it on your fridge for easy reference.



ALLERGY FREE BAKING SUBSTITUTES 

1 CUP FLOUR 

½ cup rice flour 

¼ cup tapioca starch or flour


¼ cup cornstarch


Or

1 cup Bob’s Red Mill All purpose flour PLUS:

¼ tsp Xantham Gum for cookies

¾ tsp Xantham Gum for muffins

½ tsp Xantham Gum for cookies



1 CUP MILK = 1 Cup rice milk OR 1 cup almond milk OR Coconut milk

BUTTERMILK


1 cup dairy free milk ( see above substitution) + 1 tsp lemon juice


YOGURT
Pureed Silken Tofu

Soy base yogurt


EGG
¼ cup canned pumpkin

OR

¼ cup applesauce + 1 tsp baking powder

OR

½ od ripe. Mashed banana +1/4 tsp baking powder



 BUTTER

mashed avocado, mashed banana , coconut oil or olive oil

HONEY 

 Agave syrup or Maple Syrup

 HEALTHY BAKING SUBSTITUTES

1 cup flour = 1 cup black beans

1 cup flour = 1 cup whole wheat flour



1 cup sugar = 1 cup applesauce

1 stick butter = ½ cup of mashed avocados



1 cup heavy cream = 1 cup evaporated milk



1 cup sour cream = 1 cup cottage cheese

1 cup sour cream = non fat Greek yogurt



1 tbsp mayo = 1 tbsp Greek yogurt



1 whole egg = 2 egg whites

1 whole egg = 3 tbsp egg whites (carton)

1 whole egg = 1 mashed banana



1 cup chocolate chips = 1 cup dried fruit

          (With added ¼ cup applesauce for moisture)


1 cup oil = 1 cup coconut oil

Patterns of Evidence : Exodus ( Review and GIVEAWAY)

Husband and I love history and Bible documentaries. During the lenten season , don't be surprised if our DVR is full of Christian and Bible base movies, documentaries and series. We watched every single episode of  The Bible and the Bible A.D, which unfortunately they discontinued, bummer. When I was contacted to do a review of Patterns of Evidence : Exodus , we were definitely in. I am also lucky to be able to giveaway a copy of the DVD to one of my readers.

I have watched and read many accounts questioning the validity of the Bible. The validity of the Old Testament , is it all a fact ? Did it all happened?  I have read an article explaining that the turning of water into wine at a wedding feast in Cana and the feeding of multitudes with bread and fish -- did not actually happen miraculously. It was just a "Miracle of Sharing". 

There are also documentaries , books and articles written about the Exodus, some are proving it to be a fact and some a fiction. Documentary filmmaker, Tim Mahoney did an excellent and intelligent in depth investigation.

For more than 50 years, the vast majority of the world's most prominent archaeologists and historians have proclaimed that there is no hard evidence to support the Exodus story found in the Bible.  In fact, they say that the archaeological record is completely opposed to the Bible's account.  This view of extreme skepticism has spread from academia to the world.  The case against the Exodus appears to be so strong that even some religious leaders are labeling this ancient account as historical fiction.  Filmmaker Timothy Mahoney begins with the questions, "Is the Bible just a myth, or did the archaeologists get it wrong?"  He decides to tackle this issue with a deliberate scientific approach.   After examining the details in the biblical text, he journeys across the globe to search for patterns of evidence firsthand.  The result is the most in-depth archaeological investigation into the Exodus from Egypt ever captured on film.   This scientific documentary's goal is to communicate the TRUTH of the Bible and help equip believers with defending their faith and the Bible.  



The DVD features stunning animations and a cast including narrator, Kevin Sorbo (God's Not Dead, Hercules: The Legendary Journeys), interviews with leading archaeologists including Israel Finkelstein, Kent Weeks, and David Rohl, and guest appearances by Israel's Benjamin Netanyahu and Shimon Peres.

Darn Good Slow Cooker Ribs

Are you utilizing your crockpot at home? I think every household should own one.  Weather your a stay at home mom, working mom, a college student or a dad... a crockpot is your best friend. I like coming home knowing that I have dinner already cooked  , hot and house smelling good. It is my ultimate kitchen best friend especially when I am craving for something grilled and barbecued. There is just no way that hubs and I can stand grilling when the temperature outside is  96 degrees but it feels like triple digit heat,

Here's a darn good slow cooker ribs for you, fall off the bone tender and DELICIOUS.


Ingredients:

1 rack of beef ribs ( If using baby back ribs, use 3 racks)
1 bottle of barbecue sauce - I used sweet baby ray- honey
1 tsp onion powder
2 tsp garlic powder
1/4 cup brown sugar
2 tbsp smoked paprika
1 1/2 tsp kosher salt
1 1/2 tsp black pepper
1/4 tsp cayenne pepper


Directions:

Make your dry rub by whisking all the spices and in a bowl .


 Remove any membrane from the back of the ribs. If you are using large beef ribs, cut or slice the ribs to fit your crockpot. Season both sides of your ribs with your prepared dry rub.

Place your ribs in your crockpot, meat side out. Cook on low for 7-8 hrs.


Remove the ribs from your crockpot and place on a aluminum foil lined baking sheet. Brush with BBQ sauce. Broil for 3-5 minutes.


 There..how about that tender and easy BBQ ribs.


Finger licking worthy moment , add more BBQ sauce on the side. It is really good with coleslaw salad, grilled corn and mashed potato ( mashed cauliflower , for  healthier version).

How does the $5 Savings Plan work?  When a $5 bill comes into your possession , what you do is to put the $5 bill aside and then once or twice a year you deposit your money into your savings account.  Kelsey from Keeping Up with Kelsey saved all of her $5 bills in a mason jar. She saved for five months and was able to put away $200. How smart and easy peasy is that? If you think that $200 is not that much , remember ..that $200 socked away is $200 that you didn't have before. Saved money that you can use for an emergency that you had never expected months before.  Of course the saved amount depends on how often a $5 bills comes into possession. If you use mostly cash, more than likely , you will be able to save more! Her and I are the same, months before Christmas we already have Christmas spending in mind. I don't know about you but the holidays have ways of breaking into your bank if you are nor careful. Do you want to start small ? Amee from Real Advice Gal  has got you covered. As she explains, 52 weeks savings plan is more realistic because you will start small , $1 .You save the amount that corresponds to the number of the week .  Let's say week one, you need to save $1 , week 2 will be $2, week 3 will be $3 and so on.

If you tend to forget to put away certain money for your savings envelope, then this is the best option for you.  With next to no effort, let it build up and watch your savings grow.





Make More Money

I know that to some, socking away a lil money can still be difficult. That phrase , "there is just not enough money " is true for some families. Try making more money . You can make money by  going through all of your excess stuff and selling it on ebay. You can make a lil money by consigning your gently used baby and kid items ( just make sure that what you are selling is not on recall) . How about babysitting or even pet sitting?

DIY Ariel Costume


Hello sweet readers, If you are new here..welcome! If you haven't read the part 1 of this tutorial, see it here : DIY Ursula Costume.



I have not met any young girls who doesn't like Little Mermaid. I've met grown ups who love Ariel. And our girl Lucy just went ..ummm..obsessed with it.  How about Little Mermaid song all day? She actually wanted her daddy to dress up as King Triton. Me? she said Flounder.  I prefer Sebastian.


The process for making the Ariel dress, step by step is exactly the same as the DIY Ursula Costume, the only obvious difference are the colors of the tulle, the crochet 6 inch headband , the lining and the lace.  For the lining, I didn't do much actually..it just so happened that Lucy already had a sparkly aqua blue tank top. It was perfect for the tutu dress.  No cutting , no hot gluing involved. 

For the tulle, I used the lime green alternating with aqua blue.

I did made her a pearl necklace, I just bought a pack of pearl beads and a string.

How about that wig? Isn't it spot on? We probably went to 3 different stores, to look for a decent Ariel wig. I will be very honest with you..yes they might be a little cheap BUT the quality is so poor. Some wigs you don't even know where the hair line is..some looked like a witch wig disguised in red..some wigs looked like it had been in a long , windy, open window car trip. Are you still with me? It just..didn't look like the photos you see on the package.

Now, this one that I saw on Amazon , the first time I saw it--- love at first sight.

Now, lets talk about that starfish hair clip..All you need are again a yellow ( golden yellow) felt fabric , needle and a thread, Glue gun,  stuffing and an alligator clip.  

 
I got the free starfish pattern and tutorial from Natural Kids.  I just added an alligator clip to the back.

She totally loves it ( as much as I enjoyed the pictorial part) . It really didn't matter how little we spent on this as compared to buying one from a store.. She just loves Ariel. PERIOD. But for me and the hubby..
it was a win..for staying in budget.
