Almond Milk Strawberry Banana Popsicles

   I love a cold treat, not the brain freeze part though and you know what else I love? Making a healthier treat for our girls. I make these popsicles in batches and just store them in a freezer bag. When they crave for one, we have it! We don't have to make a quick stop to the grocery store to pick up a box of popsicles.

   Who does a quick stop to the grocery store anyway? not me. My hubby..yes! He goes in there , gets what's on the list and out he goes. When in season , you can use other berries too! You can also add some other fruit ingredients like pineapple, kiwi and mango. Speaking of popsicles , I was pinning last night and I saw a nutella and cool whip popsicle! How yummy is that?..may not be as healthy with all the added sugar but hey..moderation right? wink wink..


1 cup Almond Milk
2 cups Strawberries
2 ripe bananas

you'll need : Popsicle molds . I used Dixie cups and Popsicle sticks.


You can also use milk ( low fat or whole)

I only used 2 ripe bananas , if you want your popsicles to be thicker, you can add 2 more bananas or instead of using the almond milk , just use yogurt.

Place all your fruits in your blender , and puree until smooth or pulse if you prefer  it with some chunks of fruits.

Pour your mixture into your Popsicle molds and freeze until solid.

Healthier option for a cold treat . Our girls loves them , Lucy calls it " Pink Popsicle "

Asian Style Meatballs

When we go to Costco, I buy those frozen meatballs. I like having them as a back up meal, when I have those  lazy days to cook. There are just so many recipes you can do with it. I once packed a meatball marinara sub for hubby's lunch, he said was sooo good and perfectly rounded in shape!  Few days later , he saw the frozen meatballs in our freezer and teased me about how I got him fooled with the perfectly rounded shaped meatballs..Ha!  I still love making homemade meatballs , is not splendidly round but It is superb in flavor. So let's begin..

Ingredients :

1 lb ground turkey
1/2 cup chopped onions
1/2 cup chopped cilantro
2 tbsp sesame oil
2 tbsp vegetable oil ( or canola)
2 tbsp soysauce
1/2 cup fine Homemade Breadcrumbs ( unseasoned) Click here to see how I make my own breadcrumbs -- just skip the seasonings.
1 lightly beaten egg.
1/2 cup Homemade Sweet Teriyaki Sauce


Pre heat your oven to 400 F

Prepare your Teriyaki sauce. ( Homemade Sweet Teriyaki Sauce)

In a separate small bowl , combine your sesame oil , soy sauce and vegetable oil. Set Aside.

 Mix in your onions and cilantro with the ground turkey. Mix by hand ( it is much more domesticated...)

Mix in your lightly beaten egg.

Breadcrumbs and the oil mixture you made earlier.

Arrange the meatballs into a lightly oiled baking sheet . I used a parchment paper instead. Bake for 20-25 minutes, or until browned.

Let it slightly cool and use the Homemade Teriyaki Sweet sauce as a  dipping sauce.

It is really good. Our girls and my dear husband loved it with rice!

See? someday I can make a perfectly shaped meatballs..for now..the flavor is perfect!

We always start by saying the letter out loud. Teaching her the phonetic sound of the letter. Next is the line tracing and letter tracing

We did a number sequences activity.. I shuffled all the numbers and asked her to put the numbers in right order. This can also be downloaded for free at Confessions of a homeschooler link I mentioned above,

I printed out a simple Ee in block form  and did a peel and stick activity , which is awesome for fine motor skills .
We read words that starts with the letter E. I made her repeat the words after me.

A do a dot activity. Do a dot is also useful when it comes to teaching our young ones with alphabets . It gives them awareness of the letter form thus helps in their pre writing skills.

On our craft day, we made elephant crafts. This involves coloring , pasting and cutting, Which all helps their creativity and fine motor skills. You can use safety scissors if your lil ones have not mastered the cutting skills. Let them design and color the pages in any way they like.

We also use and  to supplement with her learning. 

Just always remember to keep everything fun for you and your young ones at home. They learn through play, and you may think that they just don't get it..don't stop. They are learning.
