Crockpot Steel Cut Oats

So what exactly is this steel cut oats?

Steel-cut oats comes from the same plant as rolled or instant oats.  It starts from the whole grain , never cooked  and have been cut into pieces.  They are more dense , nutty and chewy.  It cooks longer than rolled or quick oats.

Is it healthier than rolled oats or quick oats ?

Rolled or quick oats,  are steamed and then rolled ( so it cooks faster). Steel cut oats are a bit lower in calories. Just by the way they were processed, steel cut oats has more benefits.
Here's a quick heath benefit info:

Protein : 7 grams per 1/4 cup serving
Fiber : 5 grams per 1/4 cup serving
Iron : 10 %  of the recommended daily allowance in 1/4 cup dry steel-cut oats.
 Sugar : 0 grams per 1/4 cup
Steel Cut oats sits lower on the glycemic index.
Calories : 140 per 1/4 cup ( as compared to 160 for rolled oats)

All of these facts depends on how you cook ( sugar, milk or butter you add with it ) and prepare your steel cut oats as well ( toppings).

Rolled oats and quick oats also has a lot of benefits , Use steel cuts if you want to take your healthy eating habits up a notch.

We love oatmeal for breakfast. I just normally put flax seeds, a lil bit of sugar and milk with our oatmeal. Sometimes the girls loves it with raisins. This is a nice change. It takes a lot longer to cook but I don't mind it with a slow cooker. Our home smells good and the wait was worth it.  It is very yummy!

1 cup steel cuts oats
2 granny smith apples, chopped
1 1/2 cups low fat or skim milk
1 1/2 cups water
3 tbsp packed dark brown sugar
2 tbsp butter
1 - 2 tsp cinnamon
1/4 tsp kosher salt
non stick cooking spray

Toppings : flax seeds , nuts , dried fruits

Spray your slow cooker with the non stick cooking spray.  Prepare all your ingredients.

Combine all of your ingredients into your crockpot ( Except your toppings) . Mix to combine.

( Don't mind my stained crockpot...someday I'll remember to use liners)

Cover and cook on low for 7-8 hrs ( overnight if you prefer)

Serve with your favorite toppings.

To wake up with this aroma..my goodness! Simple pleasures in life...

We loved it and will definitely make this again. Not so sweet , nutty and simply delicious.

I would love to connect with you!

Get this spot the Big N and little n activity here :

Nn is for Noah coloring sheet can be downloaded here for free too :

For this activity, we used glass beads that we purchased from Dollar Tree , You can also magnets or do a dot markers.  Download the Nn is for Nest  do a dot sheet here : via Confessions of a Homeschooler

Click here to view info or to purchase Do a Dot markers:

We did a tactile activity using Montessori Sandpaper Letters. You can easily make this at home for a cheaper price. Click here for the easy DIY  and how to use it : DIY Montessori Sandpaper Letters

We also utilized our tablet to practice letter Nn

We played a matching game , we found this game at Dollar Tree store ( I love bargains..who doesn't?) , if  you don't have a dollar store nearby..this can be made at home too. All you need is a little creativity. You can print the animals
( Noah's Animal Bible Games via Christian Preschool Printable ) and use a poster board to lay them out.

 For our crafts:
We made a nest, you will need : non toxic paints , marker , paste and scissors , paper plate and several construction paper. Cut your paper plate in half and let your smart kid do the painting. This will be our nest, Trace hand on a construction paper , cut it and draw some cute faces on it. Put the cut out hand inside the "nest".

Since we do not have noodles in hand, We used alphabet pasta to make our N collage.
You can find the collage sheets here : Alphabet Letter Collage

Lastly , we made our File Folder Noah's Ark , you will need a print out of animals in pairs, a file folder ( because it is large enough for our ark and animals) , a black and brown construction papers ( draw an ark like structure - doesn't need to be perfect!) , some paste and scissors.

You can find the animals in pairs printable here ( this is also where I got the idea for this crafts) :

Caramel Apple Muffins

My husband is not a heavy breakfast kinda person. Our girls and I loves our oatmeal with fruits in the morning. We do love muffins too! I would usually bake 2 kinds of muffins each week on my "baking" day.. it is a perfect grab and go breakfast as well.

If you want to save money in your grocery budget, you can check out my post on 8 Make Ahead Homemade Muffin Mixes.  They are all money saving and simple recipes to make.  If you want to collect more muffin recipes, follow my MUFFINS PINTEREST BOARDS. ( I told you, I love muffins..a whole separate board just for muffins!)

1 3/4 cups chopped, peeled apples
2 1/2 cups all-purpose flour
1 3/4 chopped, peeled apples
1/2 cup vegetable or canola oil
1 1/3 cup packed light brown sugar
1 egg
2 teaspoons vanilla extract
1 cup buttermilk
1/4 teaspoon salt
2 1/2  tsp baking powder
1/2 tsp baking soda

Streussel :
1 tablespoon cold butter
1/3  cup firmly packed brown sugar
1/2 tsp ground cinnamon

For the easy Homemade Caramel Sauce ---> See here

Preheat oven to 400 deg.
Line your muffin tins,  with paper liners.
Make the streussel topping first,  in a separate small bowl, combine all the streussel topping ingredients. With your fingers, combine until it looks like a crumbly mixture.

Prepare all the dry ingredients (flour, salt, baking powder and baking soda)

In a separate bowl , combine the oil, brown sugar, buttermilk, egg and vanilla extract.

Add the wet ingredients to the dry ingredients , mix until incorporated. Fold in the apples.

Spoon the batter into the muffin cup, divide the streusel topping  among the muffins.

Bake for 15 minutes ( at 400 deg)  and then dial down the temperature to 350˚ F. Bake for an additional 12 minutes. Do the toothpick trick to know when its done (  poke the muffin  , if the toothpick comes out clean .. its done ).  Let the muffins cool for a little bit , for about 10 minutes and drizzle with the Homemade Caramel Sauce.

Lovely to look at..
