DIY Paint Chip Easter Bunny Banner

Here's a very frugal way to decorate for Easter. You will just need different colors of paint chips ( Pastel / light colors) , puncher and a string. You can get the paint chips free at any Home depot , Lowe's or even at Walmart stores .

 Get the free bunny template printable HERE.




Using the bunny template, trace and cut the bunnies. punch holes and use whatever string you have in hand.You can use a thin ribbon too. Very colorful and easy to make! If you are in a creative mood, you can add some glitters or wiggly eyes , add some cotton balls for the bunny tail. Since , simplicity and easy is what I am aiming for..I just left it as is. It is still cute and an eye catcher for sure.



Display it by your mantel or hallway...



Perhaps by the window ?

EASTER HAND PRINT WREATH

You'll need:

Construction papers in light or pastel colors
tempera paints in light or pastel colors
painting sponge
scissor and glue



Let your kid paint their own hand , I did cut each construction paper in half . They have small hands so we save paper that way. Let them stamp their hand on the construction paper.Let it dry. Cut each hand outlining the hand prints, paste them together forming a wreath.

Easy Chicken Fajitas with Homemade Tortilla


We like a good Mexican dish! Hubby and I loves Alberto's Mexican Food ( not a paid endorsement..promise). Every time we go for a drive thru, no matter how long the line of cars are..we suffer through it because this place is such a treat for us. He loves the rolled tacos with their delicious guacamole on top and mine? mmmm..their chimichangas! and can I add my obsession with their green sauce. Oh my! makes me hungry just to think of these right now.

Here's a quick , budget friendly delicious dish. Pair it with homemade flour tortillas ( recipe below as well). I had been making our own tortillas for a while now, the hubby LOVES it. It is way better than the store bought ones , soft and more delish.


Ingredients:
3 chicken breasts, cut into strips
3 tbsp olive oil
1 cup , onions ( cut into slivers)
1 cup each of green bell pepper , red bell pepper and yellow bell pepper
2 cups cold water ( for soaking the onions)

Marinade:
 1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 black pepper
1/2 tsp cumin
1/4 tsp salt or more to taste

Directions:

  1. If preferred, soak your onion onto a bowl of 2 cups of water. ( just to make it a little less strong)
  2. Combine all the marinade ingredients in a separate bowl.
  3. Toss the marinade and the strips of chicken together. Making sure that all the chicken pieces are covered with the marinade.
  4. Heat olive oil and cook the chicken in 2 batches. .. ( first half  remove from pan, set aside.. repeat with the other half)
  5. Set the cooked chicken aside. Using the same pan, heat olive oil. Add the drained onions ( drain well). Saute until transparent about 2 minutes, then add all the chopped peppers.
  6. Add chicken back to the pan with the vegetables , Stir. 
  7. Optional, squeeze lime on top and serve with warm tortillas.
 
Quick, colorful , healthy and easy..

I can't even begin to tell you how tasty and delicious is this fajitas with homemade tortillas
Of course you can use a store bought one

or not...

Just make it at home..its not that hard. I promise you..it will
be all worth it and you may not ..ever..ever go back to store bought ones..





HOMEMADE TORTILLA
Ingredients:
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 1/4 tsp kosher salt
1/2 cup vegetable shortening ( or additional more tbsp , as needed)
1 cup hot water

Directions:
  1. Use a large mixing bowl, combine the flour , baking powder and salt.
  2. Drop 1/2 cup of the shortening onto the flour mixture and cut the shortening until it crumbles. Use a pastry cutter or fork or your clean hands.
  3. Slowly pour the hot water onto your bowl ( flour with shortening mixture) , Stir using a wooden spoon until it sticks to itself. If it looks dry and lacks moisture, add in 1 or 2 tbsp of shortening. Add as needed. Knead , in the bowl until the bowl forms a ball and not sticky anymore. It shouldn't stick to the sides of your bowl.
  4. Using a tea towel or a clean kitchen towel ( I have used both), cover and let the dough rest for an hour.
  5. Break the dough into 14-16 smaller pieces and make a ball. Cover the dough balls for an additional 30 minutes.
  6. Preheat a large non stick skillet, Using a well floured surface and a well floured rolling pin, roll one dough at a time into a thin round shape ( tortilla shape). 
  7. Place the thin dough into the hot skillet. You will know when it is ready to be flip when the dough is bubbly on top.
  8. Flip the tortilla and cook until golden.
  9. Wrap the cooked tortilla in a clean tea towel or put in a tortilla container to keep it warm
  10. Serve immediately .
** Store in an air tight container or Ziploc bag. To warm, wrap the tortillas in damp paper towel and microwave for 20 seconds.


You can make these awesome tortillas ahead of time or make a big batch for several meals . So good with soups too!
