Sweet and Spicy Chicken Thighs

I finally feel like it's fall. It has been crazy hot lately, I wonder if we will ever feel the "fall weather" or at least wear the boots! And since it cooled off already, I can now use the oven ..because warming up my small kitchen is actually not delightful. This sweet and spicy chicken though is delightful and mmm..mmm.good! Just the right amount of sweet and perfect amount of spicy.





Ingredients:
8 pieces of boneless skinless chicken thighs
1/2 cup honey
2 tbsp rice wine vinegar
1 tsp salt
2 tsp smoked paprika
2 tsp garlic powder
1 tsp pepper
1 tsp chili powder


Directions:
Mix all the spices together in a small bowl. Mix the honey and vinegar together.



Prepare your baking sheet. Spray with nonstick cooking spray.
Spread the spice mixture all over the chicken pieces. Making sure all the crevices are covered too!



Broil the chicken on low for 7 minutes. Then flip and cook for another 7 minutes. Flip the chicken again and baste with the honey mixture. Again make sure that even the crevices are covered with honey. Put the chicken back in the broiler and broil for another 5-8 minutes, until the honey is thickened.

Let it cool and smell that goodness! You can serve it with rice or buttered orzo.



Do what I did, I made a lettuce wrap! Put the diced sweet and spicy chicken recipe on top of romaine lettuce, add chopped tomatoes and drizzle with low fat ranch and sriracha sauce.
