Broccoli and Sweet Sausage Pasta

Planning our weeknight meals is very essential to me. It keeps my sanity. After a long day, the last thing I would want to do is to stress about what to serve for dinner. Between school activities, homeschooling our youngest and after school activities...All I want is to simplify things. Esp in the kitchen. I am not a big fan of take outs and fast food but when necessary, sure! I am sure our girls won't loose weight if they get a happy meal every now and again.
This recipe is a quick and easy weeknight meal. This broccoli and sweet sausage pasta will only take 30 minutes of your time. You can add red pepper flakes if you're into spicy meals. Topped with Parmesan shavings or grated Parmesan, goodness in every bite.







Ingredients:

1 pound rigatoni
4 sweet Italian sausage links,removed from casing 
2 minced  garlic 
1 pint container of grape tomatoes, halved 
1/2 - 2 cups of steamed broccoli florets
1/4 cup Parmesan cheese 
Optional : Red pepper flakes

Directions: 

1. Cook pasta according to package instructions, reserving a cup of the pasta ( salted) water 
2. Blanch broccoli by cooking them in salted boiling water until just tender, then run it under very cold water to stop the cooking. 
3. Brown sausage in olive oil . Mix in garlic and red pepper flakes if adding 
4. Throw in only half of grape tomatoes and let it cook. 
5.Throw in second half of grape tomatoes and broccoli. Add the reserved pasta water. 6. Drizzle with olive oil and heat through. Season with salt and pepper. 
7. Mix the cooked veggies with the cooked pasta.
