Have You Thanked The Man In Your Life Lately

We don't need to wait for fathers day to show gratitude , love and appreciation to the most important man in your life..

your husband ,your boyfriend..your partner.

We sometimes unconsciously put too much attention on how busy we are

how hard it is to be a mom

the things only women can do

how hard it is at home, staying on top of everything.

We forget that our husband's cup also can get full. 

There are small , many things our husbands do that we sometimes fail to appreciate.

To my husband , who never questions and argues with any sales that I seldom miss :)

For leaving sweet notes on our message board..a.k.a bathroom mirror. You don't wait for mothers day or birthday to remind me how appreciated I am.

When I get some unneeded comments about being a stay at home mom , when sometimes other people thinks that I can nap anytime that I want or I'm just home all day doing nothing..because I can still blog  and I don't work.. YOU NEVER FAIL TO REMIND ME..that I am NOT JUST a stay at home mom. You remind me that what I do matters.. a lot.

 For giving me a bible passage when times are tough  . Reminding me that God is in control ,

Even at my heaviest ..9 month pregnancy.. You make me feel that I am the lightest woman. Ever. For always calling me sexy .. gorgeous..even when my hair really needs some serious brushing.

You love your daughters , You just don't tell them you love them show it.


You make time.

In spite of telling me that you actually don't smile in photos.. You still do it anyway :)

... because you know how I love taking pictures.

You help me a lot..

When I refuse to admit that I snore too.. you leave it at that. You choose your battles.

 for these nights..

and for these days..

We are silly and we laugh together. I love you because we are not an uptight couple.

For working so hard so I can stay at home with the kids , for all that you do.. I thank the Lord for you.

Now , its your turn..Count all the ways that your man have been blessing you.

Carrot Muffin with Cream Cheese Frosting

We had a good Easter here at home and at our church. I had fun watching our daughters do the egg hunt..they are both kind hearted that they did not fight on how much egg does one must get. They actually helped each other! Watching their excitement as they open each egg is a sweet moment. Here's what we did during that week and what we had filled their baskets and eggs : Easter For Kids

I made these muffins for our Easter lunch. Had it for breakfast and dessert.. You can have this any time of the day. . I know I can.


2 cups grated carrots
4 large eggs
2 cups all purpose flour
1 tsp vamilla
1 tsp salt
2 1/2 tsp cinnamon
1 1/2 cups sugar
2 tsp baking soda
1 1/4 cups oil

Cream Cheese Frosting :

1 8 ox Cream Cheese , softened.
1/4 cup Butter, softened
1/2 tsp vanilla
1 cup powdered sugar

Directions :

Preheat oven to 310 F. Prepare all of your ingredients and line your muffin tin with liners.

In a large bowl , mix the sugar and oil together. One at a time, add the eggs.

In a separate bowl , mix the flour , baking soda , salt and cinnamon.

Add the flour mixture to the sugar-oil mixture. Stir until just blended. Do not over mix . Fold in carrots.

Pour the batter into your lined or greased muffin tins. Bake for 20 minutes , just check and use the toothpick method to see if the center is well baked. If it did not came out clean, bake for another 2 minutes.

Let it cool. Meanwhile , start making your frosting..

In a bowl , beat your cream cheese with softened butter until smooth. Add in vanilla , then the icing sugar one third at a time until it is smooth.

Spread the frosting on top of your muffins..

or pipe it nicely .. adding some cute sprinkles or toppers.

Simple and delicious!

Pineapple and Avocado Salsa

   I love pineapple! Any recipes with pineapple to be exact. My hubby, not so much BUT he loved this salsa. The pineapple adds sweetness to the salsa. You can use fresh or canned pineapples.
This Pineapple and Avocado salsa is full of flavors. You can use it a dip of course , with your favorite Mexican dish or a topping for grilled hot dogs or brats.

I made a big batch of the salsa so there is plenty for other recipes too! Trust me, it is so awesome and delicious with grilled brats.

And this fish tacos...just yummy!


2-3 cups of chopped tomatoes.
1/2 cup chopped red onion
1-2 cups chopped fresh pineapple or canned crushed pineapple.
1 cup chopped avocado ( or more)
2-3 3 tbsp chopped cilantro
1 tbsp lime juice
salt and pepper to taste
optional : jalapeno


In a large bowl, mix all the ingredients. Add salt and pepper to taste. Let it sit in the fridge for an hour to let all the ingredients blend in.

Let them get Dirty..Let them Explore

Are you one of those parents who easily gets disgusted with the sight of your kids playing in the dirt? Do you worry so much about the germs and bacteria that your kid can be expose to? I was just like that with our first born daughter. If I could put her in a bubble ( without me looking like an extreme and lunatic mom) I think I would.

I was that mom, who did not want messy high chairs , so I seldom let her eat by herself until I saw how fun and excited she was the first time she was able to feed herself . I was that mom who controls everything when the kids do some fun painting. I want to control the messy paints...for easy clean up.
I worry too much about paint stains in their cute outfits.

I was that mom , who cringed when she plays with dirt stepped on mud  or would pick up a soiled rock. until I really looked into her eyes and noticed how happy she truly is! She was learning and having fun.. Outdoors (and sunshine) does your soul and body good.

 Latest research states that children who spends almost all day  playing indoors (instead of outdoors-- in the dirt and sunshine), with unhealthy amounts of time with technology, have a increased risk of obesity, vitamin D deficiency, depression and also attention deficit hyper-activity disorder.  It is normal to worry about exposing our kids to germs and bacteria. Dirt shelters bacteria , so we have concerns.  Studies now recommend playing in the dirt as a way to boost the body’s immune system,  allergies, and inflammatory bowel disease. ( Read : Hygiene Hypotheses ). I am not a professional nor an expert to tell you more about bacteria and germs.

All I can suggest is that outdoors and a good amount of dirt will not harm your kid. Let them play outside and have sunshine! You know how we complain about how busy we get and we just don't have time for a slow down moments?  Well, this is your them explore.. study their faces.

I love how my girls would hand me some rocks and flowers. It is special because it is all they have as of the moment but they were thinking of me. They offered it to me because they found it and thought of  it as a special gift for their momma.

 I understand that every situation, places and where you live differs.  Access to parks or other recreational areas  might be limited to your area. However , there are no limit to our creativity. A simple stroll outside is good . Try a nature walk with a basket in tow to start a rock, leaves and stick collection. How about starting a mini garden?

Washing hands after the " exploration" with good old soap and water is important to keep them from getting sick, along with their vitamin supplements and keeping all of their immunizations up to date. 

Meanwhile . enjoy that time ..they will never be that small again.

Roasted Cauliflower and Mushroom Pasta Carbonara

How do I love pasta dishes..let me count thy ways? hmmmm..whole lot!! I am not Italian for sure but every week,a pasta dish is on my menu plan. It is filling and budget friendly for sure. Our girls even loves a plain buttered spaghetti noodles topped with shaved Parmesan cheese. I love a good old spaghetti meatballs. My husband does not discriminate any pasta dish. Speaking of meatballs, you can make it at home to save money. Here's the Homemade and Make Ahead Meatball recipe.

Pasta Carbonara is one of my favorite pasta dishes. Anything with bacon is good right? If you would like to add vegetables on a dish to give to your family, this is your meal . I think picky eaters will enjoy this as well.


3-4 cups Cauliflower Florets
8 oz fresh mushrooms
1 package of fettuccine pasta
4 - 6 pcs. bacon
2 chopped garlic cloves
1 tbsp olive oil
2 eggs
1/2 cup Parmesan cheese
1 tbsp parsley
1 tbsp oilve oil
salt and pepper
2 eggs


Start by roasting the cauliflower and mushrooms. Pre heat oven to 400 F
Place the cauliflower and mushroom in a baking sheet. Drizzle with olive oil, salt and pepper.  Roast in the oven for 20 minutes , until it caramelizes.

Cook your pasta according to the package instructions. Usually takes 9-10 minutes. Cook the bacon  and reserve about a 1-2 tbsp of it's fat.


In a medium size bowl , mix the egg , cheese and parsley together. Add in Salt and pepper.

Using the reserved bacon fat, saute the garlic and don't let it burn. Turn heat to low ( or turn off heat).

Drain your pasta and reserve about 1 cup of pasta water. Combine your pasta, egg mixture , roasted cauliflower and mushroom,  bacon into your garlic pan. Mix it thoroughly. Add reserved pasta water when needed, if your pasta is just too dry. I added about 1/4 cup only.

It was really good . The roasted vegetable added extra and mouth watering flavor ...  Can't lie  I had a plateful of this goodness! Our girls absolutely loved it too.
