Taking A Break and Stepping Back






How was everybody's Christmas? Hope y'all had a wonderful and meaningful Christmas Day. We had a lot of fun , it was a special day indeed after all ..it was also my birthday! How lucky I am to share this birthdate with our Lord Jesus Christ. Hubby and the kids made it so special for me. The surprises that made my jaw dropped..all th excitement and the "thank you'sssss"..the hugs and all them kisses. All are precious to me!

There are a lot things to be thankful for this 2013. We also have big plans for 2014, we will pray for God's guidance on every step we make. We will let him take the wheel .

As for now , this momma is taking a little break from blogging for my family. Just a few days .

A Bountiful Love will resume on January 6, 2014. I have some good blog post planned for 2014 as well. 

With all the running around , baking , wrapping, errands here and there , road trips and " busy-ness" of the holiday season I would like to step back for a while and enjoy this special time. Everyday is a gift with my family..and everyday I strive for intentional parenting. Life happens and we get busy. I am taking this opportunity to spend quality time with them.

12 Days of Christmas yummies and treats : Thumbprint Cookies and Peanut Butter Cookies

   12th day of Christmas yummies and treats. 5 days away before Christmas. And because it is the last day and because we are all giddy , here's a 2fer! 2 cookie recipes..they are both classic and delicious!





THUMBPRINT COOKIES

2 cups all purpose flour
1/2 tsp baking soda
1/4 cup walnuts, finely chopped
1 cup or 2 sticks of butter , softened ( I only used 1/2 cup or 1 stick..it turned out fine!)
1/2 cup granulated sugar
1 tsp vanilla extract
1 large egg

topping: 1/4 cup finely chopped walnuts , jam or jelly ( I used a grape jelly)W


Whisk flour and baking powder together in a separate bowl. Mix in walnuts.

In a large bowl , beat  (medium- high speed) butter , adding sugar gradually. Beat until light and fluffy.

Place the dough in a plastic wrap and refrigerate for 30 mins.






Preheat oven to 350 degrees

Roll dough into 1 inch balls and roll it into the nuts.


Place on cookie sheet lined with foil or parchment.

Make an indention using  your thumb or the back of your measuring spoon.



Bake for 10-12 minutes or  until lightly golden brown.

Immediately fill the "cups" with the jam or jelly.



PEANUT BUTTER COOKIES

1 1/2 cups all purpose flour
1/8 tsp salt
3/4 tsp baking soda
1/2 cup softened butter
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
chocolate chips 

In a small bowl combine  your dry ingredients - flour , salt and baking soda.

In a large mixing bowl , beat the softened butter and peanut butter until smooth and creamy.

Beat in sugars and mix well.

Gradually beat in flour mixture.

Wrap the dough each in plastic wrap and refrigerate for about 3 hrs.

Preheat oven to 350 degrees.

Form a 1 inch dough ball . I also indented each dough and place the chocolate chips in the middle. I purposely did not use a whole lot of chocolate chips, you can add as many as you want.


Place on foil lined or parchment lined baking sheet. 

Bake 8-10 minutes or until edges are slightly brown.

Let it cool.

12 Days of Christmas yummies and treats : Snow Cookies

     I like easy recipes ,cream cheese and soft cookies. They seriously melt in your mouth! If you have a box of white cake mix, you can whip this up easy. Imagine how beautiful are these little cookies in a well decorated box?




Ingredients:

1 box white cake mix
1/3 cup oil
3 egg whites
4 oz softened cream cheese
1/2 cup powdered sugar

Mix all the ingredients , except powdered sugar until well combined.



Let it chill for about 30 minutes.

Preheat oven to 350 degrees.

Roll your chilled dough into a ball. Roll it into the powdered sugar.




Place the dough on a prepared cookie sheet ( lined with parchment or foil)



Bake for 9-10 minutes.

Dust with powdered sugar .

12 Days of Christmas yummies and treats : Christmas Sugar Cookie Bark

      10th day of our 12 days of Christmas yummies and treats. It is indeed almost Christmas Day. There are just a few knick knacks that I have to get for hubby's Christmas stocking .Browsing through Facebook and IG , I see how busy and over scheduled some families are during this time of the year. To each his own of course, some families strive on being busy. I don't. We don't .

During the busiest time of the year, in between school activities, performances , parties , pot luck's , getting our house all dolled up and Christmas shopping, it is very important to not spread ourselves thin. We should spend QUALITY and LOVING time with friends and family. Not dividing our time so much that we almost forget what Christmas is about. The true meaning of Christmas is LOVE ( John 3:16–17 ) . It is also about giving , sharing and serving others.







Ingredients:

1 (16.5 oz) roll refrigerated sugar cookie dough
a package of  candy melts OR 2 cups white chocolate chips. ( I found out that I didn't have any white Candy melts when I started baking already but have lots of pink..but white is much better )
1 1/2 cups of  M&Ms
1/2 cup of crushed candy cane

Directions:


Preheat oven to 350 degrees. 

Flour your rolling pin ( if you don't have a rolling pin , a drinking glass would work just flour it real good) and your working surface to keep the dough from sticking.


Roll out the sugar cookie dough to 1/4 inch thickness on a parchment-lined  or foiled line cookie sheet. 

Bake for 10-12 minutes .

Let cool for at least 20 minutes.

Melt your candy melts or white chocolate chips according to package instructions.
They burn easily so do intervals of 10-15 seconds.
 Prepare the candy toppings.


Spread the melted candy coating with a spatula or spoon on top of sugar cookie .

Sprinkle it with M&Ms and crushed candy canes.

Let it cool so the candy coating sets up completely before it breaking apart.

Beautiful and yummy too!

12 Days of Christmas yummies and treats : Oreo Truffles

    I made these delectable truffles for hubby's work party. They are very easy , no bake dessert even the big sister joined me in making these here in our small , messy , busy and happy kitchen. Jumping Bean loved it too!! These sweet truffles are not just tantalizing and mouthwatering , I tell you what.. they are very rich.




Ingredients:

a package of Oreo cookies ( double stuff kind is good too , but I just use the original one)
4 oz of cream cheese
 a package of Candy Melts ( can use almond bark , or any candy quick coating you like)
sprinkles

Direction:

Crush Oreo cookies ( in batches) using a food processor. If you don't have one , don't despair :) Just use a Ziploc bag , freezer bag size and a rolling pin. ..and if u don't own a rolling pin just use anything that can crush the cookies. Anything that will get the job done :)

Soften the cream cheese.



Combine the crushed Oreo cookies and the softened cream cheese. It will be crumbly at first but keep on mixing. You may want to use your clean hands.

The mixture will be thicker and it should be easy to form small  1 inch balls.


Place the Oreo balls in a slightly greased cookie sheet  , or in a wax paper. Put them in the fridge for about 20 minutes.


Melt the candy melts or almond bark according to package instructions. You may add vegetable shortening if it is too thick for you. 



Using a fork , gently dip the Oreo balls ( individually ) into the candy melts , put them back in the cookie sheet and design with sprinkles.  Let it dry.



Once dried , I used these cute little cupcake liners to hold each of the truffles. presentation matters , you know.
