Turkey Salad Sandwich


So easy and so good!

3 cups of shredded turkey meat
1 cup mayo
1/2 cup chopped celery
Sweet red pepper , chopped
Dill chips , chopped ( reserved about 2 tbsp of the pickle juice)
1 tsp onion powder
1 tsp paprika
pepper to taste

* can use red onion or green onions.


Mix all the ingredients in a medium size bowl. add pickle juice for moisture , add pepper lastly.


 and that's it.. serve it with whole wheat toasted bread or with multigrain crackers. Simply good!

Left over Turkey Soup with Homemade Noodle Soup

How's everybody's Thanksgiving? We had a nice , quiet thanksgiving in our house. A lot of blessings to be thankful for , it will be nice to have a grateful heart all through out the year though not just on thanksgiving day. After all a grateful heart is joyful heart.

So lets talk about those turkey left overs that occupied your fridge.. here's a very easy recipe. My girls love chicken noodle soup..so this is just perfect for us.



3-4 cups of shredded cooked turkey meat.
8 cups chicken stock  ( I used homemade)
1 t olive oil
1/2 onion diced
2 diced garlic cloves
1  cups of diced carrots
2 stalks of celery diced
1 bay leaf
Salt and pepper, to taste
1/2 t dried thyme or basil ( can skip , if your stock has it already)




 Heat oil in a large saucepan .Saute onions until soft,.



Add garlic . Add broth , carrots , celery , bay leaf and cooked turkey ( herbs too if using).  I used homemade chicken broth that I batch cooked last week. Still frozen and yes it doesn't look pretty :)

Cook for about 1 hour or so. Add the homemade egg noodles at the last 30 minutes of cooking. Add salt and lots of pepper if you must.



D E L I C I O U S!



HOMEMADE EGG NOODLES 


2 cups all purpose flour
1/4 tsp salt
1/4 cup to 1/2 cup milk
1 egg

In a mixing bowl , combine all the ingredients . 


Mix until it forms a sticky dough ( slight sticky). 

Big sister just loves to help



This is my best friend when it comes to doughs. It's a pastry mat. I love that it has the ideal measurement guide for pies , pizza and it has a cheat sheet of dough recipes on the side.


Roll out you dough on a floured surface ( i still lightly floured mine). Cut to your desired thickness. Just keep in mind that the dough noodle will expand / get big when cooked. We prefer thick cut noodles,

Snickers & Butterscotch Bars


Don't they look so enticing ? They are very gooey and ...YUMMY. They are very easy to make.  If you prefer  low sugar bars , you can reduced the regular granulated sugar with splenda .

 Ingredients:

1 cup butter , Softened
1 1/4 cup sugar
2 large eggs
1 tsp vanilla
3 cups all purpose flour
3/4 tsp baking soda
1/4 tsp salt
11 oz package of Snickers, fun size Peanut butter
1 cup Butterscotch Chips

Preheat oven to 350. Grease a lined 9x13 cookie sheet.
Chop the snicker bars. Just resist eating 'em..promise the end result is worth it! 

Mix butter and sugar until creamy.

Beat in eggs , Vanilla , flour , baking soda and salt.

Stir in chopped Snicker pieces.


Mix the bowl of goodness


Spread the mixture in prepared cookie sheet


Sprinkle butterscotch chips on top


Bake for 20 minutes

Let it cool and cut with greased knife

and...

admire the  heavenly squares.

Creamy Tomato with Spinach Pasta and Baked Pork Chops



 Pasta. We love pasta. Even if it is just a plain buttered pasta , my family will dig in. This recipe is just full of goodness. Serve it with a baguette or garlic bread..or to seriously have a feast..serve it with 
Baked Pork chops ( recipe below)

Creamy Tomato & Spinach Pasta

1 Tbsp olive oil
1/2 cup onion
1 tsp. garlic $0.16
1 (15 oz.) can diced tomatoes
1/2 tsp dried oregano
1/2 tsp dried basil
2 Tbsp tomato paste
3 oz. cream cheese ( sofetened)
1/4 cup grated Parmesan
1 box of penne pasta ( can use whole wheat kind)
4 cups spinach
Salt and pepper to taste.

Cook pasta according to package instructions.
In a separate pan , heat oil. Saute diced onion and  garlic. Cook until the onion is transparent.
Add the diced tomatoes with its juices, oregano, basil, red pepper flakes, salt, and  pepper to the pan.
Add the tomato paste and 1/2 cup of water to the pan  and stir until the tomato paste is dissolved into the sauce.
Turn the heat down to low. Add the cream cheese to the tomato sauce pan.
Use a whisk to stir the sauce until the cream cheese melts and incorporates with the sauce . It will be creamy. Add the Parmesan to the pan and whisk until it is melted .
Add the fresh spinach . Cook until it is wilted.
Add the pasta and mix until it is well coated in that yummy creamy tomato sauce.
Best if served immediately.

 and for the chops!



6 pork chops
4 tbsp Homemade Meat Rub

2 tbsp Olive Oil


 Preheat oven to 350 . In a skillet, heat olive oil and Sear the pork chops for about 2-3 minutes per side. 

  
Place the chops in a ( greased ) baking pan. Those sweet and yummy juices in the skillet , well lets not waste it. Pour it on top of the chops. Bake uncovered for about 1 hr or until pork chops are tender.

Serve with mash potatoes ( as shown above) or with the delicious and Creamy Tomato with Spinach Pasta.

Pan Fried Bean & Cheese Burrito






Filling :


5 cups cooked pinto beans ( Can use can of beans , homemade is cheaper )
3 Tbsp. Homemade Taco Seasoning ( if you prefer the store bought , use 1 pkg)
4 cups Mexican Rice ( recipe below)
2 - 3 cups Shredded Cheddar Cheese or Mexican blend cheese
Flour tortillas

Suggested toppings:
Sour cream , Salsa , lettuce , tomato , jalapeno, cilantro.


 Mash and mix the beans , taco seasoning, rice and cheese.



. Heat a small amount of Olive oil in pan. Put about 1/2 cup ( depends on how packed you want it to be) of the mixture in the flour tortilla.




  Roll it burrito style.

 


 Cook until golden brown. 


Serve with your favorite toppings. They are very crunchy and yummy! 

MEXICAN RICE

2 cups rice
2 cups Chicken Broth
1 tbsp butter
1 tsp garlic salt

If using a Rice Cooker : Just put all the ingredients in the cooker ..that easy!

Stove top : Bring all ingredients to a boil.  Reduce heat to low and cover.  Simmer for about 20-25 minutes.

Toddler Books that Teach


Every two weeks , we visit our local library for a book haul. When I say haul..we borrow at least 30 books.  Our girls loves books. I am amaze how jumping bean at 18 mos can actually sit still and listen while we read the books to them.

I have discovered this series of Toddler Tools books at the library ( had never seen them before at our local book store) and I love it. Not only it teaches manners and positive attitude , the illustrations on each of the books are very good , that a toddler can actually understand just by looking at the pictures.

At the very last page of the books, there are some tips for caregivers/parents as well. So If you love to read to your kiddos , I highly recommend this books.

Familiar with meltdowns and tantrums? This particular book offers toddlers simple tools on how to deal with strong feelings, express them, and calm themselves down. They can use their "calm down space" to cry , ask for a hug , to breathe and talk about their feelings.

Also , I do want to encourage y'all to curb out some time to read to our young ones at home .  We all get really busy and finds it hard to set a schedule for reading.  . Keep in mind that there are a lot of benefits, to name a few :

  • Teaching them the basics of reading
  • Teaches basic speech
  • Enhances their logical and thinking skills
  •   Instead of seeing reading as s a chore or a task, reading will become a nurturing activity.

So put those dishes down for a while , turn the TV or any media off for a few ..sit down and relax with the kiddos. Snuggling up with a book lets the two of you slow down.

Cake Pops (LAKERS Inspired) and Cake Pop Stand





I was honored to be asked to make cake pops for a surprise birthday party for a family friend of ours. He is a big Lakers fan , and that is the theme of the whole party.


You'll need:

For the Cake Pops:
Cake Recipe - ( your favorite cake recipe)
Candy Melts ( yellow and purple)
clear bags
Candy Sticks
Sprinkles

For the stand:

10-12 " FloraCraft Foam Ball
2 FloraCraft Wreath Foam  ( this would be the stand for the foam ball )
2 spools of ribbons ( yellow and purple)
Craft paints
Folkart Extreme Glitter in Plaid
Martha Stewart Multi surface Coarse glitter
Some foam brushes , fine tip paint brushes
Elmers glue
Glue gun, scissors
Scrapbook appliques


My Handy dandy tools.. of coarse you can still make your cake pops without these..

Make your cake pops (I made two kinds, Butter and Chocolate) and  design the pops the way you'd like it to be.
**To coat the pop easier, put them in the freezer for about 10-15 minutes first. Make sure you dipped the stick first into the melted candies so it will not fall. use piping bags or ziploc bags to decorate. Use sprinkles too. the designs you can make are limitless 



After all the drying, waiting and more drying and waiting and in between moaning of our two girls..Im happy with the pops. We ( yep hubby helped me!) covered them individually with the clear candy plastic bags.


 Time to make the cake pop stand..




and at last..it made the 40 minutes trip. I love Candy Buffets! Who doesn't? Big sister stood right beside the candy buffet like a candy patrol.
