12 Days of Christmas yummies and treats : Donut Muffins

This muffin is one of those recipes that are not only good during the Christmas Season. In fact, I make them all the time. When we are craving for donuts or when I know that we will have a busy week ahead. I make them in batches as well and store them for future consumption. These are awesome with coffee or tea!

My husband loves a good french toast with bacon and egg. Our girls pretty much love bacon too and all kinds of muffins. This may not be friendly to your hips but I must warn you they are really insanely good!



 
Ingredients:
1 3/4 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup oil
3/4 cup white sugar
1 egg
3/4 cups milk

FOR THE COATING :
1/4 cup butter
1/3 cup white sugar
1 tbsp Cinnamon


Premade mix I prepared days before. Saves me time!





Preheat  oven to 350 degrees

Mix the dry ingredients ( flour, baking soda, salt , nutmeg and cinnamon).

 Combine oil , sugar , egg and milk in a separate bowl.



 Add the dry ingredients to wet and do not over mix.



 Just stir until it is incorporated. 

Pour over greased muffin tins or lined tins.  Bake for 15-20 minutes.


While waiting, melt the butter in a bowl. In another bowl make your sugar-cinnamon mixture.

When muffins are done, let it cool slightly ( warm to touch).


Here's the messy part, dip the muffins in the butter .


Now dip the muffin into the sugar-cinnamon mixture. 


Transfer into a cooling rack and let it cool completely. That is if you can resist having one. I am known to fail this part. How can I resist a warm muffin!



You can store it in your fridge ( Ziploc bag), and warm it up when u want to indulge.

  4. In the ingredient list it says baking powder, but in the instructions it says baking soda. Which do you use? Thanks!

    2. I figured it was baking powder, so I used that. I made it this morning with my kids. Great recipe to make with children! They loved rolling the muffins into the melted butter, then the cinnamon sugar! I substituted Penzey's Cake Spice for the cinnamon and nutmeg in the recipe. So yummy! Thanks for sharing your recipe! This is a keeper!

  5. Subbed 1/2 cup unsweetened apple sauce for the 1/2 cup of oil also used coconut palm sugar for the white sugar in the muffin batter. Had to bake for extra 10min not sure if this is just my oven or because of my substitutions but they turned out great! Did not rise as much as the pictures but I'm fine with that. Thanks for the recipe!

  6. These are SO yummy! In order to at least feel healthy after eating four I used coconut sugar both inside and out. I did not miss the white sugar at all, and my teeth as well as my stomach felt better after eating several! The family loves them and they're so filling and yummy.
    For the one who can't have eggs I mixed 1 1/2 T chia seeds with about 1/4 C water and let it sit for a few minutes before adding about 1/2 to 2/3 cup of the dry ingredients.

    They've worked perfectly every time (I guess they should, since I'm using almost 1 pound per double batch!) except when another family member made them and substituted flax meal in a whole big recipes' worth. ;)

    Highly recommend this! Just be prepared to use a lot of butter. :)
