Creamy Tomato with Spinach Pasta and Baked Pork Chops



 Pasta. We love pasta. Even if it is just a plain buttered pasta , my family will dig in. This recipe is just full of goodness. Serve it with a baguette or garlic bread..or to seriously have a feast..serve it with 
Baked Pork chops ( recipe below)

Creamy Tomato & Spinach Pasta

1 Tbsp olive oil
1/2 cup onion
1 tsp. garlic $0.16
1 (15 oz.) can diced tomatoes
1/2 tsp dried oregano
1/2 tsp dried basil
2 Tbsp tomato paste
3 oz. cream cheese ( sofetened)
1/4 cup grated Parmesan
1 box of penne pasta ( can use whole wheat kind)
4 cups spinach
Salt and pepper to taste.

Cook pasta according to package instructions.
In a separate pan , heat oil. Saute diced onion and  garlic. Cook until the onion is transparent.
Add the diced tomatoes with its juices, oregano, basil, red pepper flakes, salt, and  pepper to the pan.
Add the tomato paste and 1/2 cup of water to the pan  and stir until the tomato paste is dissolved into the sauce.
Turn the heat down to low. Add the cream cheese to the tomato sauce pan.
Use a whisk to stir the sauce until the cream cheese melts and incorporates with the sauce . It will be creamy. Add the Parmesan to the pan and whisk until it is melted .
Add the fresh spinach . Cook until it is wilted.
Add the pasta and mix until it is well coated in that yummy creamy tomato sauce.
Best if served immediately.

 and for the chops!



6 pork chops
4 tbsp Homemade Meat Rub

2 tbsp Olive Oil


 Preheat oven to 350 . In a skillet, heat olive oil and Sear the pork chops for about 2-3 minutes per side. 

  
Place the chops in a ( greased ) baking pan. Those sweet and yummy juices in the skillet , well lets not waste it. Pour it on top of the chops. Bake uncovered for about 1 hr or until pork chops are tender.

Serve with mash potatoes ( as shown above) or with the delicious and Creamy Tomato with Spinach Pasta.
